These veggie-packed slow cooker soup recipes are going to warm you up to the tips of your toes but also fill you with nutritious ingredients.

Reasons You'll Love These Recipes

  • they are cozy and nourishing comfort food!
  • you can assemble ahead as a freezer crockpot meal OR make a large batch for meal prep
  • many of them are 'dump and go' slow cooker meals (no sautéing!)

Slow Cooker Tips For Flavorful Soup

Cooking low and slow can strip some of the flavors from these crockpot soup recipes. Here are some tips to get the BEST flavor & texture from your crockpot soup recipe!

  • use the right herbs- a general rule is to add hardy herbs like rosemary and thyme at the start of cooking. Reserve soft herbs like cilantro and parsley to add just before serving
  • add acid at the end - most soups can benefit from a boost of acid (lemon juice, lime juice, balsamic vinegar etc) at the end of cooking. It really brings out extra flavor!
  • taste for salt- always taste test before serving and stir in more salt if needed
  • use the right cut of chicken- chicken breast cannot handle over 5 hours (on low!) in the slow cooker. If you need to cook for longer than that, consider boneless skinless chicken thighs. Bonus: brown the thighs first and they will hold together even better!
  • coconut milk- in our experience, light coconut milk curdles in the crockpot, whereas full-fat coconut milk can withstand cooking up to 8 hours on low.

FAQ

Can I make these crockpot soup recipes in the Instant Pot?

Many of these slow cooker soup, stew, and chili recipes can be made in the Instant Pot - see individual recipes for details (we've included instructions if possible.

Can I cook soup on high heat in the crockpot?

When using the slow cooker, it's best to use the low setting whenever possible. The reason for this is that some slow cookers cook quite hot, and on high, they can vigorously boil and overcook the ingredients.

Is soup better in a crockpot / slow cooker?

With our tips (see above) for making flavorful soup in the crockpot, yes! It's just as good as soup on the stovetop, but maybe even better because you don't have to babysit a pot on the stove. Not to mention, you can start it early in the day and dinner will be ready and waiting for you when 5:00 rolls around!

Soup Meal Prep Tips

  1. freezer crockpot meals - some soups can be assembled ahead and frozen as freezer crockpot meals.
    • look for soups with no sautéing
    • avoid cruciferous veggies like broccoli and cauliflower which must be blanched before freezing

  2. cook first, then freeze- the majority of soups are freezer friendly! The only soups I've found to not freeze/thaw well are ones with delicate pasta shapes (like orzo).

FAQs

Is it safe to leave a crockpot on low overnight? ›

Is it safe to leave a slow cooker on for 12 hours? Yes, you can use your slow cooker for longer than eight hours, as long as you keep an eye on it. Many slow cookers do have an automatic shutoff after 24 hours.

Can you preheat an empty crockpot? ›

Most slow cooker crocks, especially the ceramic ones, take a little bit of time to heat up so you'll want to preheat before you begin. You don't need to let it heat up empty for long—even just 10 minutes of preheating will help dishes cook more evenly.

Can you cook frozen chicken in a slow cooker? ›

It is best to thaw meat or poultry before putting it into a slow cooker. Frozen pieces will take longer to reach a safe internal temperature and could possibly result in foodborne illness. Frozen or partially frozen foods can also cool everything else in the slow cooker.

Is it safe to cook chicken in a slow cooker? ›

Yes, if you use them correctly. The slow cooker cooks foods slowly at a low temperature, generally between 170 and 280 degrees F, over several hours. The combination of direct heat from the pot, lengthy cooking and steam, destroys bacteria making the slow cooker a safe process for cooking foods.

Can I leave my crockpot on warm for 8 hours? ›

The 'Warm' setting is ONLY for keeping already-cooked food at the perfect serving temperature until mealtime. To prevent food from dipping into temperatures that aren't food-safe, you shouldn't use the 'Warm' setting for more than 4 hours.

Can you leave a slow cooker on for 12 hours? ›

People do this all the time, but many aren't truly confident that it's 100 percent safe — I, for one, am one of those people. So I did a little digging to get the hard facts. The truth is, yes, leaving the slow cooker on and going about your day is safe, as long as you are using the appliance properly.

What vegetables should not be added to a slow cooker? ›

Vegetables such as peas, asparagus and peppers can become a flavorless, mushy mess in a slow cooker. Stick to heartier root vegetables like potatoes, onions, leeks and yams, or wait to add the tender vegetables until the last 30 minutes or so of cooking time.

How long can you leave something in the crockpot on low? ›

Most slow cooker meals take 8-12 hours on low or 4-6 hours on high, but there are also recipes for slow-cooked meat that take up to 24 hours. If you want to avoid overcooking your dish, follow the given guidelines as closely as possible.

What happens if you don't brown meat before a slow cooker? ›

"Browning, or caramelizing, meat before putting it into a slow cooker isn't 100 percent necessary, but it is well worth the effort for the most flavorful and full-bodied end result," he says. "The caramelized surface of the meat will lend rich flavor and color to the finished dish."

Can I put frozen drumsticks in the crockpot? ›

"It is safe to cook a frozen chicken in a slow cooker," Quin Patton, a food scientist formerly with PepsiCo, told TODAY. "You just need to make sure the internal temperature gets up to 165 degrees at some point during the cooking process."

Can you put frozen chicken in the crockpot for 4 hours? ›

I cook frozen chicken breasts in the crock pot all the time. Place them in the crock pot, cover with your favorite seasonings (I like to use a packet of taco seasoning and a jar of salsa) and leave on high 4–6 hours.

Can you put frozen vegetables in a slow cooker? ›

Just keep in mind that frozen vegetables might release more liquid as they thaw, so you might want to adjust the amount of liquid in your recipe accordingly. Also, consider adding the frozen vegetables towards the end of the cooking time to prevent them from becoming too mushy.

Is it better to cook CrockPot chicken on high or low? ›

We found that the only way to cook chicken (and turkey) in a slow cooker is on the low setting and for a relatively short amount of time.

Can you put raw hamburger in a slow cooker? ›

Absolutely, which is why you should always adjust times and amounts as needed. Smaller amounts of slow cooker hamburger only need a few hours before they are done.

Why is my slow cooker chicken rubbery? ›

Aside from accidentally overcooking the meals, the most common reason we see for tough, rubbery, or overdone chicken is customers using a Crockpot that is far too big.

Can I put beef in a slow cooker overnight? ›

Yes, it is safe to cook meat in a crock pot overnight as long as the internal temperature of the food reaches a safe minimum temperature of at least 145°F for beef, pork, and lamb, or 160°F for poultry, as measured by a food thermometer.

Can I leave chili in a slow cooker overnight? ›

Can I leave crockpot on low overnight? Yes! This is my preference. I like to assemble the chili the night before, put it in the crockpot, then turn it on just before I go to bed.

Can you put crockpot in fridge overnight? ›

Never place the dish in a pre-heated slow cooker base, whether it has been refrigerated or is at room temperature. If the recipe requires you to heat your dish beforehand, then keep them in the fridge in a different container and add them to the heated dish in the morning.
